Epigenetics is a new area of studies that has been enabled by the human genome project. This is the study of changes in gene structures that occur from outside influences like environmental exposures. Such changes can cause cell damage, changes in cell signaling, and can be create transgenerational effects. PBS has created a great set of videos to explain this area which can be found here.
